Real (or Cask) Ale is beer that is conditioned (carbonated and readied for serving) in the vessel that is served from – this can be a cask (in the case of cask-conditioned) or even a bottle (bottle conditioned).

What is a beer cask ales?
Cask ale, or real ale, is beer that has gone through a secondary fermentation in the vessel from which it is dispensed. The carbonation occurs naturally from the fermentation process.
Why is bottled ale fizzy?
Answer: At the brewery, they add more CO2 because TET bottles actually lose gas through them over time, and they don’t differentiate between batches for plastic & glass bottles and cans.
How do you serve cask ale?
Real ale is served at cellar temperature 11-13°C, which is somewhat cooler than room temperature. If real ale is too warm it is not appetizing, it loses its natural conditioning (the liveliness of the beer due to the dissolved carbon dioxide) but if is too cold it will kill off the subtle flavour.
How long can you store cask ale?
So long as it is stored at cellar temperature around 11C, and the cask is not tapped an average strength ale will last about 6 weeks; but once it is tapped it should ideally be drunk in 3 – 7 days. In a polypin, at cellar temperature, it should last for a week to 14 days.
