Thorough cooking can destroy the foodborne pathogens in oysters. Susceptible populations should not consume raw or undercooked oysters.

Shucked oysters are available, but we recommend shucking yourself at the last minute, or even while your guests are there, so your oysters won’t dry out. First, clean all of your oysters under running cold water to remove all of the dirt. Check them carefully as you wash them.

Do you wash raw oysters before eating?

At some point before shucking, you will need to give the oysters a scrub-down to remove any dirt, mud, sand, shell fragments, or other crud that you don’t want to end up slurping down. I like to get that cleaning step out of the way as soon as I get the oysters home.
